How the ratio works

The Western baseline is about 2.5 grams of leaf per 8 ounces (240 ml) of water. Lighter, fluffier leaf takes more volume for the same weight, which is why a kitchen scale beats a teaspoon. Gongfu brewing runs far stronger — roughly 5 grams per 3.5 oz (100 ml) — with much shorter steeps.
